Sometimes criticized, or no doubt jealous, because of his many hats and activities, our Chef of the Year 2006 (twenty years already...) proved by taking over the legendary Marée that he's not in the doldrums. Of course, keen observers will have noticed that his dishes can no longer lay claim to the four toques to which the brilliant chef has long been subscribed, but the former chef of Château Cordeillan Bages is still capable of moments of brilliance, as with his petals of sea bream, radish, plum and Kristal caviar, or his beautiful and gourmet lobster, potato, miso, fierce sauce. Japan and Asia are never far away, the products are beautiful and, in this room with its surprisingly young clientele (although the prices are not exactly democratic), the service does its utmost to pay homage to the master, whether or not he is present behind the pass.
