Open your chakras and get ready to face the plates of NE/SO: the frank, often surprising and assertive tastes of chef Guillaume Sanchez will shake up the unprepared. In a four-course blind menu, we encountered, as in Prévert's poem: a trout, potato and propolis siphon that achieves the feat of reconciling power and gourmandise; a red mullet associated with radicchio kimchi, green crab bisque and shellfish emulsion that leaves no palate indifferent; and a confusing land-sea dish, a duckling, turnip purée and mussel powder. To finish, a little sweetness and rest with a 100% chocolate dessert scented with juniper berry. Excellent service in a cool, relaxed atmosphere, with the sommelier knowing how to find the right matches from the very detailed wine list.
