Chef's Restaurant Raw, contemporary, uncompromising: this is not a portrait of Guillaume Sanchez, but of his restaurant Ne/So, which has been thrilling you with its avant-garde spirit for some years now. Time passes, the spirit and passion remain, and each pinch, each grain, each centiliter finds a story and a justification to constitute naturally very personal plates, where fermentations, control and balance in acidities and textures play a big role: langoustines with lovage and fermented kohlrabi, cuttlefish with smoked haddock and fermented apple and persimmon water, duck with matured yellowtail bacon, pine nuts and cinnamon - just some of the unusual encounters on offer in this unrivalled venue.
