Myrtil is part of a seasonal bistronomy approach led by Frédéric Bonnefont, with a strong emphasis on locally sourced produce, juices and sauces. The elegant, light-filled dining room blends stone and wood to create a neat, friendly atmosphere that quickly comes to life during service. Service is handled by a single person, with a fluid rhythm and attentive accompaniment, particularly when it comes to wine. The short, regularly renewed menu features contemporary cuisine with discreet Asian influences, precise combinations and play on textures. The endive starter, with lacto-fermented cauliflower cream, roasted cauliflower and preserved lemon, offers a fresh, well-balanced plate, while the braised beef chuck, split pea purée and chard illustrates a more earthy style of cooking. The dessert of congee, apples, sesame and roasted flax extends this approach with a textural construction. The cellar, featuring organic, biodynamic and natural wines, is fully in keeping with the identity of the place.
