Gourmet Restaurant In the heart of the lively bouchon district, close to the Opera, this new restaurant is well worth a visit. In an uncluttered dining room, chef Noé Saillard offers an eclectic cuisine with delicate dressings: celery cooked like risotto, flavored with watercress and discreet lovage, an excellent but microscopic rutabaga with katsuobushi and a beef cheek with seasonings that are a little too strong. Jade Dumoulin's dessert, with its puzzling combinations of citrus, green curry and seaweed, is well worth exploring, as each spoonful on the plate offers a wide panorama of flavors. A short but interesting wine list.
