It's a beautiful mill on the edge of a pond on the outskirts of Dax, where Thierry Berthelier has been conscientiously working for over thirty years. The technique is tried and tested, and the experience always a happy one, for this house where the Landes region serves as inspiration. Rediscover large roasted Landes asparagus, soft tartine with fromage frais and Aquitaine caviar, langoustines in ravioli and morel sauce, sole meunière, slow-cooked veal chop with salted butter, mashed potatoes, jus simple and mushrooms, crispy millefeuille with Madagascar vanilla. Very friendly service.
