Chef's Restaurant Anne-Marie and Thierry Berthelier's address ticks all the boxes: a bourgeois table set in the former Dax grain mill, a large house on the edge of a pond, bordered by the Landes forest; in short, a postcard setting, where calm and politeness reign. The establishment is naturally frequented by a loyal clientele, who find themselves in good hands, with impeccable service and meticulous table setting, under an elegant exposed framework. The chef's menus, ranging from €55 to €115, include crispy hen eggs with seasonal vegetables, duck gizzards confit, lichette of semi-cooked foie gras, duck leg confit, potatoes browned in goose fat and mushrooms, Grand Marnier soufflé and mandarin sorbet. Suitable cellar.
