Isabelle, Noël Laligant and their daughter Maëva wanted to create a family project in an exceptional setting 15 minutes from Beaune. A 12th-century mill on the banks of the Dheune, built by the monks of the Cîteaux abbey and transformed into a charming hotel-restaurant in 1977. Traditional French semi-gastronomic cuisine orchestrated by the chef, with a new-found specialty: pôchouse, or freshwater bouillabaisse, celebrated by the Confrérie des Chevaliers de la Pôchouse de Verdun-sur-le-Doubs. Inspired by neighboring market gardens and livestock farms, the chef also prepares succulent pike-perch with beurre blanc and crayfish, suckling pig in a wood-fired oven, and fine Bresse poultry... Two terraces to make the most of sunny days, one in front of the mill for a coffee and the other sheltered on the island for a break in the bar-lounge or to enjoy, for example, a delicious lobster in the brazier and enjoy a concert. And if you want to extend your stay, there are 19 rooms, a swimming pool, a Jacuzzi, a petanque court, a helipad, a car-wash area and two parking lots.
