Gault&Millau's review2026
Housed in the monumental former wine storehouses of the Chartrons district, Morimoto Bordeaux strikes a chord. The place achieves an unlikely but happy marriage between the industrial red brick of Bordeaux's winegrowing heritage and a subdued, elegant Japanese aesthetic. On the plate, chef Masaharu Morimoto's promise is kept: a precise fusion where Japanese technique meets French terroir. The menu is coherent, seductive in its variety and meticulous in its graphic presentation. You'll be carried away by the deliciousness of takoyaki revisited with tempura octopus, before appreciating the surgical precision of a melting nigiri chu toro. Duck fried rice perfectly embodies this cultural encounter, combining the comfort of local confit with the mastery of the wok. The vanilla dessert plays on the textures of the rice and the smokiness of the genmaicha, bringing the meal to a fine conclusion. To accompany this cuisine of character, the wine list plays with intelligence rather than bluster. It explores French grape varieties with balance, navigating easily between nuggets from accessible winemakers and grands crus classés, supported by a clever by-the-glass selection.
