That's what we call catching the zeitgeist. Louis Amen and Louis Moreau, who contracted their surnames to find the sign, run their bistro with dexterity, drawing on their past experience, notably at Laurent. The salmon gravlax leche de tigre lait de coco menthe piment doux coriandre, the gambas riz vénéré bisque légère, the farmhouse guinea fowl maïs gnocchi sauce chorizo are fresh and masterful. Good seasonal desserts (honey-roasted apricots, pavlova...).
