Minore follows in the footsteps of chef Katsuaki Okiyama, known in Paris for having run Abri, a tiny address that has become a cult among connoisseurs. With this new venue, he moves away from the strictly gastronomic framework to offer a freer vision, at the crossroads of contemporary cuisine and cocktail bar, in a raw, minimalist decor. This is a conscious decision, but the overall impression can be a little cold, reinforced by a rather distant welcome and service. The deliberately limited menu is based around a tasting menu, accompanied by a particularly well-crafted range of cocktails, a true signature of the place, and full of surprises. In the kitchen, mastery is undeniable. The oysters, enhanced by a white wine, lime and tarragon cream jelly, play on freshness and tension. The yellowtail, subtly flavored with hay and carried by a gourmet sabayon, illustrates fine aromatic research. Pollock, accompanied by a mussel and oyster mushroom sauce, develops a deeper register, between iodine and earthy notes. The Mont-Blanc, revisited with a roasted grape ice cream, concludes the meal with precision, without heaviness.
