Chef's Restaurant At Marah, everything starts with a committed, complementary duo: Léa Viano in the dining room, Louis Robergeau in the kitchen (who has worked at Mirazur, Dame de Pic Megève and Jacky Ribault). Together, they have built an experience in their own image: sincere, clear, with no superfluity. Their cuisine goes straight to the heart of the matter, with well-chosen produce, plates built around taste, and a genuine respect for the seasons. Precision without stiffness, well-balanced dishes, and a clear desire to offer something just right. A discreet, slightly secluded location, away from the hustle and bustle: the area is calm, the natural light is abundant, and the atmosphere of the place matches that of the street, sober, quiet, chosen. Barbecued oysters spice up a potato stew with seaweed butter, fennel combines with black garlic and cookie in a well-balanced dessert, and nasturtium adds an unexpected vegetal note to a Grenoble sauce. Nothing is gratuitous, everything is in its place. Every plate tells a story. Léa serves alone, and presents each dish with clarity. The relationship with the guests is direct, human and unfiltered.
