Remarkable Restaurant Christopher Hache seems to have found his home port, his Pays de Cocagne, with all the flavors of superb produce from local breeders and growers. The man who once worked at the Crillon is now enjoying the beneficial sunshine far from Paris, and has made friends with his suppliers, such as the fisherman in Grau du Roi or the market gardener in Tourves, thus weaving a chain of trust to which the guests of this house in the heart of the village, ten minutes from Saint-Rémy, are naturally sensitive. Depending on what's picked and what's available, he composes a menu that's well renewed, or an attractive €160 menu. Summer is a great time to savor his declination of tomatoes, muge confit with olive oil, cucumber pickles and seaweed sabayon, Alpilles lamb with Bruno Cayron's multicolored chard curd, or the originality of red tuna feet and packets before a fresh Crau peach and hay dessert. With its simplicity and focus on the essentials, without seeking out technical feats or haphazard combinations, this cuisine is very much like him, and suits us devilishly well. There's also a regional wine cellar with nearby winegrowers, and a pleasant terrace on the street so you can enjoy the village's lively atmosphere.
