Chef's Restaurant Nicolas Grandclaude is free and serene in this house, which sees him blossom a little more each season. His cuisine radiates the same sense of well-being that pervades the entire dining room, with guests clearly happy to have knocked on the right door 15 minutes from Epinal. The menu is very much up to date, seeking out seasonal produce with no local imperatives: tomato melon shells verveine, wild sea bass gilded in semi-salted butter artichoke fennel and star anise, apricot from Roussillon almonds honey and lavender in a three-course sequence at €48 (increase by €12 for each additional service). Pleasant, efficient service and a cellar that caters to all regions.
