Chef for 15 years, Maxime Marteau opened his restaurant in 2024 in the heart of Carquefou. Having worked in prestigious establishments, he invites diners to discover his bistronomic cuisine: "it's traditional cooking, revisited with a modern twist, using local produce according to what's available and what's in season" Meat from regional producers is of the highest quality, while fish comes from auctions from Vendée to Brittany. Menus (€25 lunch, €39 dinner) or à l'aveugle evenings and weekends for €48, include spider crab makis with sesame seeds and coleslaw, or stuffed cabbage with lemongrass-ginger poultry and fragrant broth. Main courses include duck breast with kumquat juice and pumpkin, or market fish with peanut sauce and cauliflower. Desserts are equally refined. All this is accompanied by a fine wine list featuring 100 references. The cosy decor adds to the charm of this small, warm restaurant. The team takes great care of its customers.
