His palette is the best of seasonal produce, which he uses in its entirety to subtly reveal all its aromas. He expresses the breadth of his talents, often enhanced by an Asian touch, on the lunch and dinner menus, in five and eight courses, and varies them daily to create surprise and reinvention. Dining here is a true experience of delight for the senses, experienced in a bubble of refinement, at the heart of an elegant atmosphere. Excellence is everywhere, from amuse-bouches and mignardises to the house's signature dish, abalone with pig's ear, fennel, chanterelles and green tea sauce, with magnificent food and sake pairings.
