Gourmet Restaurant It's everything we love, the simplicity and honesty of professional cooking in a welcoming, well-kept bistro setting. At the beginning of the year, Gilles Bérard decided to simplify his offer, to work alone on a lighter yet technically sound menu, as he has done so well over the years, with recipes both familiar and to be rediscovered, thanks to a well-calculated mise en place: gravlax salmon, egg meurette, eggplant confit and fresh goat's cheese, snails with parsley butter, Bobosse andouillette, homemade pike-perch quenelle with lobster sauce, Charolais tartare, Etrez fromage blanc... The cellar is well-stocked and doesn't stop at Burgundy's borders.
