The chef has created a renewed seasonal plate, in a €38 menu featuring a spring roll with skate, avocado and crunchy vegetables, crab consommé with pomelos, roasted peach return, fresh herb and citrus semolina, masala foam, rice with black pudding, asparagus and grilled squid, or wild boar in puff pastry crust, celery velvet and wild mushroom cream.
