Chef's Restaurant Founded by Mathieu Viannay, the restaurant passed to Julien Gautier after the chef left for Mère Brazier. Julien Gautier (ex-Léon de Lyon) has maintained the fine spirit of an upscale bistro, combining Lyonnais chic, fine produce, classically inspired recipes and remarkable attention to form and content. On the €49 menu: open ravioli with squid ink, squid ragout, gremolata and parmesan emulsion; roasted scallops, Jerusalem artichokes, raisins, mushrooms, hazelnuts and verjuice; free-range guinea fowl, roasted supreme and thighs, butternut, blackberries, wild mushrooms and jus; warm madeleines with honey, orange marmalade and fromage blanc sorbet.
