Launched by Mathieu Viannay in 2005, the restaurant quickly came under the management of Julien Gautier, who took over ownership in 2010. The Léon de Lyon alumnus has maintained the restaurant's chic bistro feel, offering sophisticated, well-dressed seasonal cuisine in a plush setting. The €51 menu is a testament to a technique as solid as ever, featuring glazed mussels, roasted leeks, crunchy vegetables, eggs, herbs and bread tuile, a turbot section, pumpkin declension, clams and seaweed, reduced fumet, a fine Miéral half-pigeon, confit leg, pig breast, Jerusalem artichoke, kale, hazelnuts and cooking juices, and finally a salted butter caramel demi-choco.
