Gault&Millau's review 2026

The installation - at last! - of Romain Zarazaga, winner of the Gault&Millau Endowment, in Bouchemaine, in a tuffeau manor dating from 1768, with a breathtaking view over the Maine River, impressive master rooms and the fire crackling in the fireplace, period furniture, rare crockery and ultra-fine glasses. It's clear that this well-trained chef, who has worked with the likes of Troisgros and Renaut, is aiming for the very highest standards. Beneath their apparent simplicity, the plates highlight the product, whether common or noble: the brown mushroom covered with a buckwheat collar seems to grow on a bed of reduced onion juice, amidst ground ivy leaves; poultry supremes and compressed thighs are savored on a cabernet franc sauce, accompanied by almost caramelized tuberous chervil, before a superb dessert based on hazelnut sorbet topped with a fine corolla housing a soufflé ; the technique is obvious, the plates clean and legible, almost uncluttered in an intelligent, thoughtful and harmonious work; the wine list gives pride of place to biodynamic wines from local signatures, but remains open to the rest of the region. Two toques from the start, and promises to follow.
