The arrival of Mégane and Thomas Huybrechts in Cestayrols is excellent news in the fight against village desertification. The couple have taken over this emblematic local address, breathing new life into it with a host of services, from parcel delivery to bread delivery, not forgetting of course the modern, accessible cuisine. Even so, the dishes show a real effort behind the scenes, with leek tombée, perfect egg and smoked bacon crumble, sea bream carpaccio with citrus fruit, pike-perch fillet, shallot and red wine sauce, seasonal vegetables, duck parmentier with onion confit and chocolate fondant.
