Opposite the Grand Maison, the superbly refurbished 17th-century Hôtel de la Tour d'Auxois, the bistro moment, full of homage to Burgundy (like the poultry à la Gaston Gérard) but also to "Loiseau cuisine", makes for an entertaining gourmet moment. Because the atmosphere is there, because the menu knows how to play with tradition as well as modernity (a vegetable curry with basmati rice in a veggie suggestion, for example), in a very masterful execution: good pâté en croûte, trout in yellow wine sauce, poultry in Epoisses sauce and even a Loiseau burger with Burgundy beef, Morvan tomme and frog ham in tempura. Good home-made desserts, extensive Burgundy cellar.
