Set high above the lake, this white building has been modernized to welcome today's tourists. We stay at the hotel, and join the locals at the restaurant, which is simple and well-run, offering a very contemporary cuisine: razor clams with parsley, tuna mi-cuit eggplant "Hanoi style" and vinegared rice, veal chuck with chimichurri sauce, hazelnut ice bar and chocolate fondant. The glassware is classic, but local is a good idea, with wines from Coiffy and Muid Montsaugeonnais.
