From the top of the Sofitel, the view of Marseille is breathtaking, with the Palais du Pharo to the left, Fort Saint-Jean opposite and the Old Port to the right. To accompany this exceptional scenery, chef Sylvain Touati has imagined a cuisine that's as much local as it is local. These include Camargue oysters, poached in their own water, watercress cream with horseradish, fromage frais and vanilla shallots; Mediterranean red mullet, sweetened with fish soup, fennel and citrus fruit; roast lamb with wild thyme; shoulder confit, melting apples, spinach and banon; and citrus fruit from Berre l'Etang in vacherin.
