Chef's Restaurant Barely a year into his career, with the Dotation and the honors (the 109, Jeune Talent), Louis Festa is already evolving, in the mastery and diversity of his cuisine. Admittedly, he's still cautious with his set menus in various risk-limiting courses, but what he offers is genuinely personal and interesting, now approaching the third toque, in this warm and engaging setting, with its stone walls and large fireplace, brilliantly hosted by Cerise, the chef's companion. Well-controlled vegetable dishes include cabbage, a dashi broth and a bread pairing, followed by lentils in three textures (ice cream, crisp, risotto), the exotic yet very local white trout from the Saint-Astier aquaponie in a tapioca crust and barbecued filet of Périgord ostrich... Pleasant hazelnut and cinnamon dessert, regional wine cellar visiting the department's vineyards.
