Gourmet Restaurant Customer care! That's the secret of this never-empty restaurant. The owner cleverly uses this secret weapon to ensure a successful moment in this bistronomic haven, from the first course (a few canelés with port and shallots) to an appetizer such as this pea and mint velouté. The rest of the story is for the customer to write, either by choosing from the à la carte menu dishes that bourgeois cuisine would not disavow: tourte de gibier, foie gras et trompettes des Maures, salade de sanguins, or by letting yourself be carried away by the menu of the moment at €43, which showcases all the savoir-faire of the chef and his team: squash crème brûlée, eggplant caviar, scallops a la plancha and fromage blanc sorbet, mallard breast cooked on the bone, confit leg, crispy vegetables with tagine spices, chopped almonds and persimmon. Finally, for those who have already tasted all this, the weekly menu at €26 is very much to the point: hummus, wakame and marinated shrimps, IGP Sud-Ouest pork chop, Mont Ventoux spelt risotto, spaghetti squash... A special mention for the pastries that bring the meal to a close; Paris-Brest and Grand-Marnier soufflé are musts in this respect. Good cellar of regional classics. Friendly service.
