Pilgrims on their way to Santiago de Compostela are used to frugal meals, but some undoubtedly join the tourists at the Arrambide inn, a highly Basque stronghold before it is gourmet, combining the nobility of Pyrenean terroir with the spirit of sharing that unites all visitors to Saint-Jean. The table has evolved, more chic and comfortable than ever, and the menu is undoubtedly a little less rooted and more contemporary, giving everyone their own reading and favorite tastes: poached duck foie gras with leeks and roasted hazelnuts, line-caught hake with snacked seasonal vegetables, onion royale with basil emulsion, pan-fried sweetbreads of suckling lamb with potatoes, porcini mushrooms and piquillo peppers, hot soufflé passion sabayon with red fruit mascarpone. A good menu at €80, with a limited but sufficient choice, and an extensive wine cellar with solid references from outside the region.
