Chef's Restaurant It's a little Garden of Eden in the heart of Chalosse, a 4* hotel set alongside the lake, surrounded by a large wooded park that exudes tranquility. The contemporary building is shaped like a steamboat, extending its large windows to the water's edge. In the kitchen, chef Annie Demen creates dishes that are always a pleasure to eat, with light, local recipes, which you can discover in a 52 € menu-card. These include cannelloni with two salmon varieties and julienne leeks, veal medallions with tarragon, lamb mouse lacquered with spiced honey, and poached pear Belle-Hélène style. Signature dishes include sesame crisp with pan-fried Chalosse foie gras and sweet Jurançon perfume, or roast pigeon with Armagnac. Well-stocked cellar.
