Chef's Restaurant After giving up his sacred Charlemagne de Pernand, Laurent Peugeot quickly found himself back on the piano by setting up at Jardin de la Cloche, where he oversees the entire catering operation, right down to room service and banquets. An interesting challenge, which also enabled him to relaunch a fine dining experience at the "Jardins", giving his style, always up to date, looking towards the Rising Sun and attentive to true flavors; that of mackerel and asparagus spiced up with miso, Arctic char and very crunchy peas on a wasabi broth or pigeon, very well cooked rosé on trunk, sriracha sauce reduced sand carrot juice. La main est sûre is part of this well-controlled hotel service, with its pleasant garden terrace and a classic Burgundy cellar with well-known labels.
