Chef's Restaurant Tradition is alive and well, and Toulousan habits continue to invest in this beautiful and renowned establishment. Stéphane Tournié offers a chic diner atmosphere with calibrated menus, willingly using a few prestigious ingredients, in his Truffle menu for example, and a short menu of safe dishes: foie gras ravioli, langoustine carpaccio, sweetbreads in blanquette sauce on a langoustine tartar, Suzette-style crêpe Marie-Louise. On the counter side, simpler cuisine, grandma's dishes and bistro fare, at more affordable prices.
