In the spectacular troglodytic setting of Les Hautes Roches, young chef Benjamin Chrétien's cuisine is precise, clean and diligent, still a little tentative in its approach but already seductive in its execution. His work on veal - impeccable cooking, deep juices, masterful interplay of textures - shows a real sense of balance and sure taste, even if we're still waiting for his personality to assert itself fully. On the sweet side, Pauline Macé offers a fresh, well-constructed clementine dessert, combining spicy ice cream, tangy juice and light mousse in a coherent, pleasant whole. The cellar, generous and well chosen, is an additional asset, with a wide range of regions and a good place given to the great names of Touraine. The whole is technically clean, respectful of the product, supported by a professional dining room and an atmosphere more contemporary than expected in this emblematic place.
