Two years after moving into a pretty mansion in this seaside town, chef Nicolas Coutand was awarded the title of Grand de Demain in 2016. For the past ten years, he has continued to create dishes where the land meets the sea, and where vegetables, flowers and honey come directly from his kitchen garden; under an apparent simplicity, he regales us with braised endive twisted around trout confit, with mango to soften the whole; we must also dare to enclose cod under a parmentier with crispy kale and cauliflower petals; the dessert declines the pear in all its states: in compote, raw, in jelly or pickles on fine tarts and cider balls on a smooth cream. The wine list features the organic Vendée fiefs of Domaine des Granges and Domaine de l'Orée du Sabia. The softly-priced lunch menu is set to music by an attentive team of women, led by Mélanie, the hostess of this innovative restaurant that has clearly earned its two toques.
