Chef's Restaurant
Just outside the spa town of La Bourboule, in a true haven of peace surrounded by a pine forest, the restaurant Les Fées Mères—run by chef Thomas Perron and his partner Laura, who manages the dining room—rewards patient diners with refined, locally sourced cuisine. This summer, the menu featured: a rich foie gras and pork terrine, rye French toast with subtle hints of smoked Cantal cheese, a small trout marinated in Japanese knotweed, and two standout dishes: Angus beef served as a spicy merguez sausage, as well as a dessert that was both nostalgic and intriguing, featuring a parsley sorbet paired with a chocolate and barley tartlet. The extensive wine list is brimming with unexpected treasures from the Auvergne region. Seven- or nine-course blind tasting menus are available for €70 and €90, respectively, with a vegetarian option.
