The chef prepares top-notch French cuisine, ideal for special occasions: Thionville snails dressed in green cabbage, airy vegetable garden herb broth, lobster, soft risotto and carapace jus with yellow wine, braised veal sweetbreads with salted butter, cabbage and guanciale jus.
