On the edge of the region, between Laon and Charleville, this proud edifice has become a prestigious stopover for visitors. The estate lends itself to high-level vacationing, just as chef Alexandre Perlot and his teams must strive for excellence. On the whole, the promise is kept, with a menu that's both wise and expressive of Châtelaine cuisine: shellfish soufflé with langoustines and caviar, monkfish piquée with bacon and poultry jus, sweetbreads with summer truffle and sweet potato in red wine sauce, pistachio raspberry mille-feuille with vanilla ice cream. A varied and classic cellar.
