On the Belgian border, in the picturesque Gaume region of Lorraine, this stopover hotel is a wonderful place to stay in the heart of the region, also featuring a gourmet restaurant. The chef creates contemporary cuisine that breaks from the traditional styles of local establishments, offering seasonal dishes that are constantly evolving. Highlights include the lentil salad, eggplant, and pointed cabbage; coppa with smoked paprika cream cheese; hake fillet with parsley pesto, polenta, and fennel; beef tagliata with arugula, cherry tomatoes, and baby potatoes; and finally, poached pineapple with hibiscus, coconut cream, and popcorn.
