Chef's Restaurant You could walk past the address without stopping. In fact, it's hard to find on this perpendicular to Rue de Bretagne. The setting is banal, yet the approach and plates are not. This is true "fusion" cuisine, combining the best of French and Japanese cultures. The chef chooses his meats and fish from the most beautiful places and works them in a remarkable way. At the same time, he knows how to bring his own culture, personality and uniqueness to each dish, such as the monkfish and asparagus that make up a great dish on a menu where each plate is carefully thought out in terms of its associations, tastes and presentation.
