A chic version of the mountain bistro, within the superb Hôtel des Dromonts. Plates spiritually navigate between alpine and traditional influences, from salmon gravlax, guacamole with yuzu juice, crunchy vegetables and black sesame, to pot-au-feu-style cod back with Colonnata bacon, to the traditional tatin here paired with a génépi sorbet.
