Chef's Restaurant Great houses are made to last. After last year's shock, a new chef with a predestined name, Teddy Regain, has taken over the kitchen. Of course, the old ways have been retained, with the Vieille France spirit and the chabada, when we could have taken advantage of the opportunity to really refresh the place, which is still as haughty as ever facing the Mesland vineyards. There's not much choice on the menu, but the ingredients are carefully selected, and the dishes are well mastered, even if the seasonings and ideas are a little lacking in tone, as if the healthy touch absolutely had to be pushed. Two toques nonetheless for the flame-cooked trout, trout broth with coffee vinegar and combava, and the two-cooked lamb (pink saddle, shoulder confit, potatoes, hay-infused lamb jus). The meal ends with a simple, fresh dessert: citrus soup, citrus fruits preserved in a carcadet (bissap) syrup, kalamansi sorbet, reminding us that the prices, for their part, are well back in the days of the four toques.
