After several eventful years in the kitchen, this Loire institution seems to have finally found in Arthur Peta the ideal profile to enable Hauts de Loire to regain its place in the regional gastronomic landscape. Taste and precision, like the confit of leek, soft cuttlefish and Aronia berries, enhanced by a crème de cassis jus, or, at the end of the meal, the "babamisu", which mixes two great classics, with an imbibed cookie lacking depth, but a delicate mascarpone cream and a green coffee ice cream to great effect. A fine wine list, with a wide choice by the glass from €15.
