As the seasons go by, Jacques Bertrand carefully crafts a menu that stimulates the appetite, offering classic dishes: French scallops a la plancha, braised endives with citrus and coffee sabayon, grilled pike-perch on skin with shallot and meurette sauce, veal sweetbreads with salsify and glazed onions, full-bodied veal jus.
