Gourmet Restaurant In the center of Vichy, this large room with the allure of a Napoleon III salon is in the hands of Emmanuel and Lucie Basset. After last year's slight disappointment on the plate, this year's sensations were nothing short of delightful! A lot of attention has been paid to detail, in the decor combining mirrors, parquet floors and a stylish fireplace with chandeliers and an exhibition of contemporary paintings under the high ceilings, in the cards bound by a local craftsman, and in the choice of products, such as sweetbreads, scallops or foie gras. The plates are generous and classic, with a touch of fantasy: we'll remember the suckling pig shoulder confit overnight, accompanied by mashed potatoes, while the pan-fried foie gras is paired with creamy polenta, asparagus and an orange-soy jus. Excellent service from Lucie, who manages the 900-strong cellar with ease.
