It's a beautiful Napoleon III salon in the center of town, where the whole of Vichy meets up with regulars to enjoy the refined surroundings and fine cuisine of Emmanuel Basset. Together with his wife Lucie, they offer traditional cuisine with a twist: marinated combawa-coconut shrimp, broccoli guacamole, mango tartar with coriander sriracha sauce and pumpkin seed crisp, velouté de champignons de Paris en vol-au-vent, filet de sole à la plancha, Vernusse oyster mushrooms and voatsiperifery pepper soubise cream, tournedos Rossini and mac and cheese with Comté du Fort de Saint-Antoine. Lunch menu €36.
