Gourmet Restaurant Of course, a sense of mischief is only pleasing when it's well channeled and civilized. Sébastien Guillo, master restaurateur, strives to show tradition in a modern light, with even a touch of sophistication. His dishes are as close to the promise as you can get: beef tongue carpaccio with gribiche sauce, veal liver with sherry vinegar, oyster mushrooms and puréed spinach, roast leg of lamb with rosemary. With desserts imposed by the times (baba, pavlova, soufflé), the full menu is €39.
