Between the Alps and Provence, in the charming village of Embrun, this hotel-spa-restaurant is a good starting point for discovering the surrounding countryside. It's a warm and relaxing place, where Paul's table adds a gourmet touch. The menu is full of good ideas, including a truffle-flavored potato moelleux, a foie gras heart coulant, a full-bodied woodland mushroom jus, a mountain peasant velouté, bacon and fir espuma, chestnut tips, a Charles Murgat salmon mi-cuit stuffed with white fir, marinated with dandelion flower, saffron risotto, mussel crumble with Hautes-Alpes herbs, seasonal vegetables, a fillet of heifer with white fir bud sauce, seasonal vegetables, a crêpe Suzette flambéed in the dining room. Raclette available to order.
