Juliette Viano and Samuel Victori have never hidden their gastro ambitions, their noble aspirations, with titles and chabada and the desire for official recognition. Today, they're a little less restless, but they're developing and duplicating, making their Salon Bonaparte the trendiest of Nice's chic restaurants, the one where they chisel a cuisine of products, racy and personal, each plate laid down like a piece of goldsmithery, with high society fare. There's no doubt that most of the dishes belong to the higher category, with the work on scallops, carabineros avocado with passion vinaigrette, locally caught fish and its beurre blanc with dashi, in well-organized sequences (no à la carte) like this dinner menu at €135 (the entry-level menu is €95 for lunch).
