Two years ago, he took over from Vava in this quiet corner of Montmartre: this well-established bistro is the brainchild of Chloé Magel and Lucas Tresse, who combined their names to create the restaurant’s name. The menu is well-curated, free of gimmicks or excessive trends, even though the ingredients are very much of the moment, thanks to these two young professionals who trained at Camdeborde: octopus salad with mint, ajo blanco, almonds, and lovage oil; seared pork carpaccio with Caesar dressing, arugula, pecorino, and capers; Sicilian caponata; and baba with Plougastel strawberry liqueur and buttermilk ice cream—all served in a simple, modern, and unpretentious setting.
