Gault&Millau's review 2026

It's a dream setting south of Lourdes, a 4* hotel in the heart of the Pyrenees, with panoramic views from the terrace. It's a grand period house, bourgeois and classic, exuding a comforting family atmosphere. Jean-Pierre and Alexis Saint-Martin, father and son, perpetuate a fine tradition, that of foie gras au torchon and garbure vegetable pickles, gambas pampered with porc noir de Bigorre, rice socarrat, pigeon supreme, leg pastilla and sweet-spiced vegetables, a tatin-style éclair and caramel ice cream. Decent cellar with affordable prices (Sérol et fils, Stéphane Ogier, la Grange des pères, Jean Teiller, Pellehaut...).
