Faithful to his constant craftsmanship in these walls since 2001, chef Tomohiro Uido chisels precise, technical and tasty dishes, working the best of the French terroir he discovered in 1989, with excellent Asian contributions like shiso. This little leaf from afar, for example, is inserted with great skill and appropriateness between exceptional crabmeat and an onsen egg, forming a simple but memorable starter. Alongside, the yellowfin tuna, also of perfect quality, is given only a modest touch of shiso, but this is deliberate, as curry has also stepped in to elevate this superb meat to the highest level. After the surprise of having tasted the 3 starters of the 5-course menu on the same plate, it's a duck breast in top form that confirms the chef's mastery, the bird boasting a brilliant lacquered finish on one side and a tortilla-style minibun on the other, both versions surrounded by a honeyed ginger jus that will leave a long-lasting impression on the palate and in the memory... a model. The other 10-course menu offers many other discoveries, including the goï cuôn (spring roll) of blue lobster with foie gras in terrine, before always finishing with fine, elegant seasonal sweets. Accompanied by glasses of wine that are more expensive than elsewhere, this restaurant, run with a firm hand by Sabine Uido, is on the verge of 3 toques.
