Chef's Restaurant Raymond Cornelissens' dishes consistently demonstrate remarkable savoir-faire, reminding us that at the foundation of true cuisine lies the technique of a demanding chef. The plates retain this spirit of simplicity, with few ingredients and a lot of work, notably in the €47 menu with leek tatin and roasted gambas, filet of lean meat with broccoli mousseline, candied Buddha hand and citrus emulsion, duck breast, parsnips and salsify breaded, red wine sauce, financier and blackcurrant confit, chestnut mousse. In the cellar, you can rely on Jenny Cornelissens' careful selection and advice. Tasting menu €55.
