Gourmet Restaurant A former head sommelier with Marc Meneau and Patrick Henriroux, then a wine merchant in Lyon, Tristan Ringenbach and his partner have taken over this inn on the Col du Bonhomme road, creating a bistro-cave with turquoise decor, partly panelled, and pleasantly spaced wooden tables. In the kitchen, Valeria Albakov draws her inspiration from local produce such as snails from the Pré aux Colimaçons, trout from the Guidat fish farm and vegetables from a local organic market gardener. While we liked the tomato, strawberry and basil emulsion dish for the quality of the produce and its clear-cut flavors, we found the roasted eggplant less clear-cut. The well-controlled cod with shimeji mushrooms proved to be a very tasty preparation, while the not-too-overcooked beef sirloin with shallot confit was enhanced by a professional sauce. For dessert, we end with a bakery-quality but fresh nectarine tart or a rather complicated red fruit composition, which combines a financier and sweet chantilly. Wine is the heart of the matter, with an exceptional cellar of 3,700 bottles, 1,500 of them Alsatian, managed with great passion and rich in nuggets of excellent value for money, to be discovered absolutely.
