A stopover inn on the road from Chaumont to Troyes, this handsome 3* hotel offers traditional regional cuisine and well-equipped rooms for a comfortable stopover in the heart of the Aube region. The chef works his products with undeniable skill, and amply justifies his reputation; and the menu offers a fairly complete panorama, from pan-fried foie gras, declension of chaource, roast monkfish with clementine, coconut and lemongrass, andouille 5A with chaource cream and rattes potatoes, veal chuck, reduced jus, salsify, pear and chorizo mayonnaise, to religieuse with salted butter caramel.
