Today, the place is rather quiet after having long been, thanks to Christian Etchebest, one of the hotspots of modern bistros. Retro tiling, wooden furniture and red banquettes make up a rather warm, nostalgic decor. The service is dedicated, appropriate without being really sharp, to deliver Basque-Gascony cuisine as in the good old days: veal shank terrine, hake and clam casserole, the vanilla soufflé with jam is worth a small toque alone. An abundantly crossed-out wine list, leaving little choice in the South-West.
