The hidden gem is the heel of the Italian boot—more specifically, Puglia, a wonderful region known for its wines and cuisine, such as the pizzelle made with a very thin batter, regionally inspired antipasti (eggplant gratin, focaccia, arancini, burrata and zucchini or bresaola…) and, of course, the indispensable and unmissable orecchiette.
